Lou Pepe Gueuze ’13 – Cantillon

Cantillon Lou Pepe Gueuze.

2 year old lambic, refermented in the bottle by adding some ‘liqueur de tirage’, a sugar solution that serves as food for the yeast and kickstarts bottle refermentation.

Funky; barnyard, hay. Fruity; tart apple, apricot skin. Low on Co2. Tad acidic in the start but finishes mellow.
